Each batch spends between four & five days soaking in the tank at a cool temperature ~ 10’c before it is prepared for fermentation.

Fruity aromas of red cherry and olive.

Palate

A full bodied palate showing black cherry and ripe plum flavours. The structure is smooth and silky with a lovely toasted oak finish.
